KemSU students (the basic organization of the REC "Kuzbass") develop components for 3D printing of food

Students of the Institute of Engineering Technologies of Kemerovo State University presented a startup 3D Printed Food. The research of the team of novice developers is aimed at import substitution and cheapening of the main components for 3D printers used in the food industry. "It is gratifying that there are more import substitution projects, the range of industries where they are successfully applied is expanding. I am also glad that young scientists are joining the developments. The new project, which is currently being worked on by a team from KemSU, will allow you to get ready-made food products using 3D printing. The advantage of this project in comparison with those presented on the market is its versatility," said the Governor of Kuzbass Sergey Tsivilev.

The principle of operation of a food 3D printer is layer-by-layer printing, only food products are used instead of plastic. So far, chocolate remains the most popular material in food 3D printing. The development of Kuzbass students is aimed at creating an extruder nozzle for three—dimensional printing, allowing the use of products of various consistencies.

The team leader is Alyona Bordokina, a full—time master's student in the direction of "Technological Machines and Equipment" (profile "Mechatronics and robotics of biotechnological industries"), and the project team also includes bachelor students in the direction of "Technological Machines and Equipment" Nikita Pasechnikov, Vladislav Yugai and Igor Kiselyov.

The team plans to work out the design of the device of the 3D printer itself, which will not only print, but also thermally process products. Currently, standard food printers are only able to print the product, and it is necessary to bring the product to readiness in the oven or on the stove.

For reference. Kemerovo State University together with the University of 20.35 participates in the acceleration program "Startup as a diploma of KemSU" as part of the implementation of the strategic academic leadership program "Priority 2030". From Kemerovo University, 28 projects are being implemented on the platform, in which 82 students and 34 mentors participate.
